Still Picture Format - This lets you choose the format to store your snapshots as. JPEG is recommended because it is very compact and generally gives good results. It can change the look of the picture slightly however, but usually not noticeably.
JPEG Quality - This is a percentage for JPEG quality. If the quality is less, the size of the image will be smaller. If conserving space on your hard drive is a priority, you may want to reduce this amount, although if you need to make sure your images are perfectly clear, you may want to pick a value closer to 100%.
Video Format - This is the format to use when snapping video clips.
